Outdoor BBQ Grill Recipe for Damper

Now that we have all woken from our sleepy hibernation of winter, thoughts are now turning to the warmer months of spring and summer to start looking to entertain outdoors and get the BBQ Grill ready to start to crank out all of those tried and true family favorite recipes.  If you have ever gone outside and smelled the delicious smells of a barbeque, automatically your mouth will start to water and before you know it you will be too thumbing through the recipes.

What I love about outdoor bbq grills is the fact that you can choose any grill that you are most comfortable with.  For me it is the choice of a gas bbq that makes cooking a barbeque day or night as easy as pie, because it is instant.

I would like to share with you a damper recipe that is a sure fire winner for any outdoor entertaining on your grill.  This recipe saves me from running to the store looking for fresh bread and the smell of the damper cooking on the outdoor grill is going to drive the neighbors crazy!

Pumpkin Damper

You will need about 3 cups of mashed pumpkin: do not use any butter or milk cream etc.  When you mash use and old dry pumpkin not the soft butternet variety.

You will need:

  • 2.2 lbs of self raising flour
  • 2 oz butter
  • half a tsp salt
  • 3 cups mashed pumpkin
  • 1/3 cup water, approximately

Sift flour and salt into a bowl, rub through the butter and then make a well in the flour and add mashed pumpkin and water to make a soft sticky dough.  Turn this out lightly onto a floured board and knead lightly.  Cut the dough in 2 and make into 2 damper shaped round loaves.  Get the BBQ nice and hot around 475-500 fahrenheit and put a rack on the grill place the baking sheet on the rack with the 2 loaves cook on this temp with the lid down for 10 minutes and then reduce the heat to moderate  375-400 fahrenheit for a further 20-30 minutes.  Alternate the loaves during cooking and ensure that you don’t put the baking sheet directly onto the grill as this will burn it.

When cooked I wrap them up in a clean tea towel and then serve with my favorite BBQ meal.  Absolutely delicious!
